SP Essex had a great time providing a Hog Roast in Greenstead for the End of Summer party at a Barracks in Colchester. It was a chilly but bright start to the day as we set off to make our way to the barracks in Colchester. The menu for the party was a traditional hog roast cooked fresh on site, three salads and new potatoes for their end of summer party….. and what a party it was. As we arrived at the barracks we were met by the lovely Sergeant Shauna who directed us to where they wanted us to put up our catering tent to serve from later that evening. As we got closer to the pitch we could not miss the entertainment they had planned being erected. Dodgems!! How fabulous to have full size fair ground Dodgems. With the bright lights flickering and music blaring we set to work on the hog. We lightly oiled and seasoned the pig with our own special recipe to get the best crackling in Essex and then its on with the flames to cook the beast! Whilst the Hog Roast Greenstead was cooking we set to work on the freshly prepared salads, these consisted of, Tomato and Mozzarella with fresh basil oil, homemade Coleslaw and Green leaf salad. Yum!
With all the prep done it was time to start carving the hog ready for the serve. As we prepared a variety of wraps, rolls, BBQ sauce and homemade apple sauce they were busy having fun on the bumper cars. I am sure you are not allowed to drink and drive! ;0) As soon as we gave the green light that we were ready we were literally non stop, almost all of the hog was eaten, we only had a couple of portions of hog left at the end. That to us is a great sign that the food hit the spot.
