First fabulous wedding of the season.
Last weekend Spitting Pig Essex wedding season began and what a fabulous wedding it was! We arrived early to the venue, Richmond Hall, near Daws Heath to set up our Gazebo and to get the huge hog we were cooking for ninety guests turning on the hot flames. With the hog scored and in its position to cook we brushed with rapeseed oil and sea salt then it was time to let the spit machine works its glorious magic. Whilst the hog roast Daws Heath was turning and cooking beautifully the team at SPE quickly got to work on the rest of the menu for the day. The bride and groom chose to have roasted new potatoes with fresh garlic and rosemary. Tomato and mozzarella salad, homemade chunky coleslaw and a fresh green leaf salad, tossed with peppery radish to give it that extra zing. For the vegetarian guests we provided tasty haloumi burgers with aubergine, homemade houmous and a tangy roasted red pepper relish. As the venue was set back within a high street we were not surprised to see passers-by pop their heads around the gates to see what was going on, it was the beautiful smell of the hog roasting and the garlicky potatoes that brought them in, lovely food smells always makes people curious. We were even asked for a business card from one passer-by! The bride and groom were due back to the venue at 3.30pm and we had the hog serve time of 4pm so with that in mind we got to work on preparing the delicious fresh homemade salads. With all the fresh produced washed it was time to chop and present on platters. As the guests started to arrive they couldn’t resist to come and have a look at the hog roast Daws Heath before we started to carve into the crispy cracking, so many watering mouths! Our head chef started to carve the succulent meat whist the rest of the teams laid out the salads and dressing, as we laid the last bowl on the table the bride and groom arrived back. They were overjoyed with just the look of the food, let alone the taste. We had such great feedback throughout the service, we kept seeing the same faces two or three times over! One guest just could not get enough cracking, the best she had ever had apparently!
A great day was had by all, the lovely bride and groom, Sioban and Phill were overjoyed.
As we cleared away we left knowing that we had put smiles on people’s faces. There really is no better feeling than that.
