Another nice crisp fresh weekend its lovely getting up when the sun is shinning makes you feel so exhilarated! Hog roast Castle Hedingham caterers were catering for a large fishing event it was the Annual Fresh water fishing competition, an event which is hosted every year and this is the first time we have been asked to host the event. We had been asked to carer for around six hundred but we brought a little extra as some times more turn out than first anticipated. We set up our machines under the marquee and we were right on the riverbed it was very tranquil and the views were amazing. We set the table and got our Castle Hedingham hog roast on the go one machine we filled with chickens and lamb we decided to make some huge sandwiches, which are a meal in them and made some lovely fresh sage and onion stuffing and mint sauce for the sandwiches. We then moved onto making some salad we chopped some lettuce, tomatoes, cucumber, spring onions and made a lovely yogurt and mint dressing perfect! We then popped the bbq plate onto the other machine and thought it really appropriate to make a nice seafood stir fry and some vegetables, we took some nice fresh prawns and shredded the cod and cooked them on the hot plate it was really quick we then added some spring onions peppers and bean sprouts and made a lovely dill sauce. When the fishing was over everyone headed over to us the fishermen and women who had been fishing certainly were hungry and we plated up and handed out the food they particularly enjoyed the seafood we knew they would! we also had some jacket potatoes cooking away and used some of the leftover chicken with some sweet corn to make a lovely filling and these went down a treat. Everyone left full and we were given lots of praise from the host who thanked us and he even gave us a 6-pound cod, which looks too good to eat!
