One of our long-time repeat corporate customers Bryn recently called us to book us in for a winter warmer hog roast Maldon feast for his company’s seminar. While he last hired us to serve our scrummy pigs in buns over the summer, at this time of year, Bryn will often ask us to provide plates of meat and vegetables instead – something warmer for the cooler autumnal days, which is great for guests when you’re having outdoor catering. Accompanying the slices of pork and crackling would be broad beans, broccoli and carrots, which would be roasted in a tray underneath the hog itself, as our machines can cook more than just meat.
Additionally, Bryn asked us to cater for a vegetarian and a gluten-free guest. While the latter could simply enjoy the winter warmer as even our homemade gravy is suitable, we would make vegetarian sausages for the veggie, to eat alongside the roasted vegetables.
Early on the day of the seminar, we arrived bright-eyed and bushy-tailed in order to set everything up and cook the food ready for a lunchtime service. Once the meat had been scored, we added water and smothered it all over in lots of salt, then set the temperature and it was cooking away. A few hours later and we prepared the fresh veg and soon they were roasting, too.
At lunchtime, the guests all arrived to gorgeous smells and the hog roast Maldon itself was a sight for sore eyes, and they all happily dug in.
